In the highlands, the agaves thrive during the hot and sunny dry periods, soaking during the rainy seasons. The mineral-rich soil results in high-quality agaves that take between 7 and 9 years to reach peak maturity. That is when the Jimadores harvest the piñas (hearts) of the plants.\u003cbr\u003e\n\u003cbr\u003e\r\nOnce the ripe piñas are harvested, they are cut and cooked in stainless steel autoclave vats for 15 hours. After they have been cooked, the fibers and sugars are left to ferment, the yeast transforming the sugars into alcohol. Finally, the juice is slowly double-distilled in pot stills. Each of the Calle 23 expressions is then left to mature in ex-bourbon casks, the Blanco being the exception ― this one is brought to proof with pure spring water and bottled by hand.\u003cbr\u003e\n\u003cbr\u003e\r\nWhile the production process is the same, Calle 23 Criollo Blanco is a different beast.
