Ricardo grew up in a family of distillers and growers (Fourth Generation Distiller and Grower). The agave is harvested by hand and is cooked underground in stone ovens.\u003c\/p\u003e \u003cp\u003eThis technique is called the Tahona method. It fermented and is double distilled in copper stills. Soon after the \u003ca href=\"\/collections\/mezcal\"\u003eMezcal\u003c\/a\u003e is aged for two to four months in American oak barrels. It is filtered and blended to be 40% ABV and 80 proof. The flavors this mezcal carry are smokey and full of agave flavor.
