It's a small distillery where each distillation is a mere 150 liters. The botanicals are distilled separately and only the heart of the distillate is used. Instead of only relying on numbers, each batch is thoroughly tested, ensuring that the aromas and tastes are perfect. \u003cbr\u003e\n\u003cbr\u003e\r\nThe botanicals that go into Keyaki gin are seri (Japanese parsley or water dropwort), yuzu (an aromatic citrus fruit that originates from China and is a cross between grapefruit and mandarin oranges), green tea leaves, grapes, juniper berries, and coriander seeds. The whole seri plant gets used, from the leaves to the roots. To ensure the freshness of its herbal notes, the plant is harvested on the day of distillation. The yuzu comes from 3 different Miyazaki regions, the freeze-and-drip method ensuring that the rich aromas of the fruit are preserved in the spirit. The Monou green tea leaves from Ishinomaki bring a touch of bitterness, while Merlot grapes from the Akiu Winery bring sweetness and depth. Finally, the juniper berries and coriander set up the spicy, herbal, and citrusy notes.
