One of these distilleries is Yaesen Shuzo, located on the island of Ishigaki, which is part of the Yaeyama Island group in the Ryukyu Islands archipelago. The distillery, founded in 1955, originally produced traditional Ryukyu awamori and pineapple liqueur.\u003cbr\u003e\n\u003cbr\u003e\r\nKujira Ryukyu Whisky was distilled from selected Indica rice that was fermented with the unique black Koji mold. It's there that the historical Shinzato Shuzo distillery lies. Founded in 1846, it's said to be the oldest distillery in Okinawa. Traditionally, Shinzato Shuzo are masters of vintage awamori (distilled rice spirit) and plum liqueurs.
