The family has been producing mezcal for 4 generations using blue Weber agaves that yield between 7 and 10 bottles per plant. The blue Weber agaves are harvested once they are mature, which takes upwards of 7 years. The jimadores cut the plants using a coa knife, revealing the heart (piña). Then, the piñas are steam-cooked in a stainless steel autoclave for 8 hours before letting them rest for 12 hours. Once they are cooled, they are crushed and strained. The agave juice ferments naturally for 72 hours before finally being double-distilled and bottled at 80 proof. Produced in annual vintages, this mezcal stays true to the rich legacy and history of the famous spirit.
