Mezcalero is distilled from at least 50% wild or semi-wild agave. \u003cbr\u003e\n\u003cbr\u003e\nThe agave is then cut into chunks and roasted in a fire pit.  After roasting, they are crushed to extract the juice, fermented in small vertical wooden vats, then double distilled in small pot stills.
