Once the grapes reach their peak maturity for distillation purposes, Navarre harvests them by hand \"  a technique abandoned long ago by most cognac houses. After the grapes are harvested, they are fermented and distilled immediately using a 10 hectoliter (250-gallon) copper-pot charentais still.\u003cbr\u003e\n\u003cbr\u003e\r\nFollowing distillation, the cognac is aged in oak barrels for a minimum of 30 years, although the average age of the cognac is closer to 40 or 50 years.
