This means that traditional methods are employed, including donkey-drawn stone mills, earth ovens, and copper pot stills. The agaves are selected by hand to be harvested by the palenqueros, removing the leaves to expose the piña (heart) of the plant. The hearts are then quartered and cooked for up to 3 days in earthen pits, covered with large leaves, rocks, and soil. The cooked piñas are then crushed and the fermentation process begins. After up to 2 weeks, the liquid is distilled.\u003cbr\u003e\n\u003cbr\u003e\r\nThe Producer Ensamble mezcal is crafted with 2 types of agave: the espadin and cuishe. The first take 6 years to mature, the second 9.
