The Grande Champagne cru — the most highly sought after and desirable cru in the Cognac region — is known for its chalky soils, which result in higher-quality grapes and finer cognacs as compared to other crus. Once the grapes have been harvested, they are pressed and fermented before being twice distilled through a traditional copper still.\u003cbr\u003e\n\u003cbr\u003e\r\nFollowing distillation, Prunier XO Cognac is matured for a minimum of 20 years, although the average age of the cognac is 45 years (a portion of the cognac is up to 50 years old). As a result of this incredibly long maturation process, the cognac has a bold and robust flavor profile, with aromas of citrus and vanilla giving way to notes of candied oranges, honeyed oak and caramel on the palate. By the early 18th century, Prunier had established himself as one of the finest distillers in the country, and had given birth to Maison Prunier. Upon his death in 1732, Gabriel Prunier (Jean's son) took over the family business and in the early 19th century, Francois Prunier relocated the house to the Cognac region of France. Today, Maison Prunier remains situated in the same medieval house in Cognac that Francois established over two centuries ago.
