They produced their first barrel from their very own mix of carefully selected grains, which are mashed and fermented at ideal temperatures to preserve certain precise flavors and aromas, before being distilled without compromise. Their spirits are matured in barrels crafted by Kelvin Cooperage, which has their roots in Scotland. This unique bourbon is a part of Rabbit Hole’s set of limited edition small batch, experimental finishes. To make this special expression, Straight Bourbon Whiskey with a wheat mash bill, is matured in #3, wood-fired, alligator char. They transfer it to 500 liter casks that have been used to perfect sweet, dark Pedro Ximénez sherry. The resulting whiskey is refined, balanced with a long cascading finish. This special PX cask finish earned Platinum at the 2017 SIP Awards, and a Gold medal at the 2017 Los Angeles Spirits Competition.
