By the turn of the 17th century, however, both Trinidad and Tobago remained sparsely populated forests, and Spanish hegemony in the region was dwindling. In 1797, a British general by the name of Sir Ralph Abercromby sailed to the islands and declared that they would thereafter be subject to the British Crown.\u003cbr\u003e\n\u003cbr\u003e\r\nUnder British rule, Trinidad and Tobago experienced a massive influx of settlers, and became a critical junction in Britain's trading routes with its other colonies. In addition, the islands' unique environment and geography â€” it enjoys a tropical climate, rich alluvial soil and a remote location outside the path of most hurricanes â€” made it ideal for the production and cultivation of sugarcane.\u003cbr\u003e\n\u003cbr\u003e\r\nZaya Gran Reserva 12 Rum is a blend of 12 select Trinidadian rums, each of which is crafted using virgin sugar cane harvested from the islands. Once the cane is pressed, the remaining juice is fermented with a proprietary strain of yeast before being distilled through a copper still. Following distillation, the rum is matured in medium-charred, white oak casks for a minimum of twelve years.\u003cbr\u003e\n\u003cbr\u003e\r\nZaya Gran Reserva Rum has an aroma of smoked bananas, vanilla and baking spices. The aroma gives way to hints of mocha, dried fruits, nutmeg and maple syrup, which are well-balanced by notes of cinnamon, butterscotch and smoke.
