About Akashi White Oak Japanese Single Malt Whiskey
For 10 months of the year, the distillery only produces sake and shochu and their whisky production occurs in the two remaining months. Akashi Single Malt is a marriage of their single malt and three different whiskies a 7, 5, and 4-year old that have been aged in three different casks, namely Spanish Sherry, new American oak, and ex-bourbon. Bottled at a pleasant 92 proof, it offers light fruit aromas with malt, spice, and apricot on the nose while the palate is light and soft with touches of red apples, toffee, and local herbs. About Akashi
In the town of Akashi not far away from Kobe lies Japan's only distillery situated close to the sea. Eigashima Shuzo was established in 1679 and it is one of the oldest family-owned distilleries in Japan. Eigashima was making sake and shochu as early as 1888 and in 1919, it was the first Japanese distillery to obtain a whisky license. Even though Eigashima was a pioneer in its field in Japan, it remained a small distillery with only 7 full-time employees working there today.In the pristine nature of Kobe Bay, they're proud of their clean air and water and they value quality over quantity. Their 9th generation leader Mr. Hiraishi leads the company with a simple motto — honesty. Due to the proximity to the sea, their whisky is influenced by the salty air and extreme temperature differences between seasons.
