BOANN MARSALA CASK FINISH IRISH WHISKEY
<p>Crafted at Boann Distillery, a family owned and operated distillery in the heart of Ireland’s Boyne Valley. Boann distillery was founded, and is run by the Cooney Family who have over 50 years’ experience in the Irish drinks industry. Boann Distillery uses three handmade custom copper pot stills, local grains and Boyne Valley well water to create its award-winning new make spirit and the distillery has been specifically designed to produce single pot still spirit. The mixed mashbill includes malted and unmalted barley as well as other grains such as oats, wheat and rye. It is the inclusion of these unmalted grains that allow for a more diverse variety of flavours to the subsequent spirit. Combining traditional brewing and distilling methods with innovative technology allows Boann Distillery to create the best possible single pot still spirit and the use of local grains, well water and on-site maturation results in whiskeys of distinct character with a real sense of place.</p>
<p>Boann Distillery uses only the finest casks for maturation and finishing for each expression. Boann Single Pot Still Irish Whiskey Marsala Cask has been initially matured for three years in ex-bourbon barrels made from American oak with a heavy charring, from a number of famed Brown-Forman distilleries in Kentucky. For the finishing, a selection of Superiore and Fine Marsala butts made from French oak sourced from the famous Sicilian Marsala house of Cantine deVinci were used.</p>
<p>We use a selection of Superiore and Fine Marsala Butts made from French Oak (Quercus Petraea) sourced from the famous Sicilian Marsala house of Cantine de Vinci. We filled a variety of these beautiful casks with our bourbon matured Single Pot Still and let it age for a further for 12 months. The Marsala wine casks add layers of French Oak spice and juicy Mediterranean citrus notes.</p>
