When Paul Mathew started gaining his experience behind the bar, there was a question that kept on occupying his thoughts. He understood the flavor profiles of different spirits, he knew their ups and downs, and he knew how to mix them so as to bring out the most in them. But — if someone were to ask for a non-alcoholic version that would be just as deep and just as complex as its alcoholic counterpart, there would usually be no easy answer. And that simply didn’t sit right with him. His initial career in conservation biology prompted him to find answers within one of the greatest inspirations in his life — nature and its measureless possibilities. He spent a year making the most of his wide-ranging knowledge of botanicals, experimenting with plants, sustainable sourcing, macerating, and dehydrating samples. In the end, he succeeded, and this is how Everleaf was born.
