Founded in 2016 by Jim Chasteen and Charlie Thompson, ASW Distillery is located in Atlanta, Georgia. The young ― and only the second legal distillery in Atlanta since Prohibition ― it has already been awarded the Most Awarded Craft Whiskey Distillery at the San Francisco World Spirits Competition for several years in a row. While waiting for their grain-to-glass whiskeys to mature, they set out to source spirits from across the country to "fiddle with", which is how The Fiddler brand came to be. After several years of experimentation and tasting, they've settled on a handful of core expressions. Fiddler Georgia Heartwood Bourbon is made with the same MGP mash bill as Fiddler Unison Bourbon: 51% corn, 45% wheat, and 4% malted barley. The whiskey is finished with hand-charred Georgia white oak heartwood staves for several months before being bottled at approximately 115 proof ― seeing as it's a single-barrel expression, the proof varies. The wheat creates a soft texture with salted caramel notes, while the staves bring maple, sandalwood, and oak notes to the table, resulting in a unique and delicious bourbon that won Gold Medals at the San Francisco World Spirits Competition in 2018 as well as 2021.
