We meticulously select only the finest cuts of each botanical, honoring the rareness of our ingredients and extracting their aromatic signature at the ideal temperature to capture their very essence.
Gin d'Azur prides itself on its rich provenance. Distilled at Merlet et Fils Distillerie, the gin embodies the culinary excellence that the French are renowned for. Just as the Côte d'Azur stretches from St. Tropez to Monaco, Gin d'Azur is a testament to the heritage and lifestyle of this glamorous coastline.
The combination of copper and open flame distillation reveals unique aromas. Indeed, the extreme temperatures obtained make it possible to obtain Maillard reactions.
This ancestral technique remains to this day the most sophisticated method of distillation. It requires know-how and absolute precision. Gin d'Azur is one of the only gins in the world to use this artisanal method of distillation.
Picture Paul & Roland walking amidst the picturesque landscapes of the Côte d'Azur, foraging for the finest botanicals. They sought limited, meaningful botanicals that would give Gin d'Azur a distinct identity. From lavender fields to the rocky mountains overlooking the sea, the flora and fauna of the region were captured in each bottle. Gin d'Azur was created by master distiller Paul Caris to capture the flavors and feeling of the French Riviera. Since its debut in 2019, Gin d'Azur has won the gold medal and the Consumer Choice Award at the prestigious SIP Awards 2022. It is now served in some of the most exclusive bars in the world, including the legendary Annabel's in London and exclusive Cheval Blanc in St Barth.
