This rum, produced without additives, originates from the Distillerie de Savanna on Réunion Island. The production process involves distillation on a Savalle copper column still, following a prolonged fermentation of molasses. This traditional, molasses, unaged high ester grand arôme rum is bottled in New York State at 115 proof. The flavor profile is wonderfully distinct and complex. On the nose, it presents savory notes of pickled green tomato and black olive, subtly underscored by floral hints. The palate is treated to an array of overripe tropical fruit, saline, and herbs. The long finish introduces tones of sun-dried tomato and candied fruit, providing a memorable closing to the tasting experience.
