Every barrel season released by Stellum is represented by a constellation. Leo is one of four releases that boast a mash bill of 75% Corn, 21% Rye, and 4% Barley Malt. Aside from being an incredibly powerful pour at 120.5-proof, it is wonderfully distinct from our Perseus selection. When you pour this bourbon into your glass, you'll discover notes of cherry, cinnamon, and sugar cookies. On the palate, you'll find stone fruits balanced with the evolving flavors of a s'more, from milk chocolate to graham cracker to toasted marshmallow. This evolves into a finish of honey, walnuts, and toasted oak with a perfectly set warmth that calls you back for the next sip.
